In one of his early papers, Frederic Poupaud was among the first to fully
understand the role of entropy production in deriving macroscopic 
equations (such as the PDEs of hydrodynamics) from microscopic, kinetic models. In this 
talk, I will try to discuss the influence of this idea in our current understanding 
of the subject.
